Jamaican Jerk Grilled Eggplant
Ingredients:
1/4 cup 1UpYourFlavor Sauce
1/2 tsp sea salt
1/2 black pepper
2 tbsp fresh parsley (optional)
1 large eggplant (or sub 2 small eggplants)
4 tbsp of vegetable oil (or sub with oil of your choice)
Directions:
- Slice eggplant in half vertically. (Eggplant can be sliced horizontally, but each slice will need to be at least 2 inches thick)
- Generously brush 1UpYourFlavor sauce on the sliced side of eggplant for both halves, and sprinkle sea salt and pepper on top.
- Lightly grease grill grate/pan with vegetable oil. (prevents eggplant from sticking)
- Heat grill/grill pan to medium-high heat.
- Once hot, add eggplant and grill both sides for 3-5 minutes each, or until grill marks visible.
- Lightly brush the grilled eggplants again with the 1UpYourFlavor sauce, and garnish with fresh parsley.

Jamaican Jerk Ribs (Yard Style)
Ingredients:
1Cup of jerk seasoning
2 Cups of 1UpYourFlavor sauce
1 tbsp of light brown, coarse grain sugar
2 tbsp of red wine vinegar
4 lbs of pork spareribs (substitute with beef spareribs)
Directions:
- Combine and mix jerk seasoning, 1UpYourFlavor sauce, sugar and vinegar.
- Coat ribs with mixture. Allow ribs to marinate in refrigerator for 3-4 hour, or overnight.
- Heat grill to medium-high heat, then place ribs on the grill.
- Cook for 1-1.5 hours. (Turn and brush ribs every 20 minutes with excess marinade or 1UpYourFlavor sauce)
- Remove ribs from grill.

Jamaican Style Coconut Cream Fish
Ingredients:
4 salmon fillets (substitute with preferred fish)
3 tbsp of Mayonnaise
1 tbsp of 1UpYourFlavor sauce
1/3 cup of sour cream
1/4 cup of coconut cream
1 tsp of grated lime zest
1/4 cup of lime juice
1/2 cup sweetened, toasted, shredded coconut
Directions:
- Preheat oven to 350 degrees.
- Place fillets in a greased 13x9-in. baking dish.
- Spread mayonnaise and 1UpYourFlavor sauce over fillets.
- Place in oven and bake until salmon begins to flake easily with a fork. (About 18-22 minutes)
- In a small saucepan, combine sour cream, coconut cream, lime zest and juice.
- Cook and stir over medium-low heat until blended.
- Remove salmon from oven and lightly pour mixture from saucepan around salmon.
- Pour a streak of 1UpYourFlavor sauce on top of salmon and sprinkle with shredded coconut.
